Eggplant Parmesan
Makes one 9x13

Ingredients:
1 ripe eggplant

1 can or jar of your favorite spaghetti sauce

1 bag of shredded mozzarella cheese

6 Tablespoons of Parmesan cheese

1-2 eggs

3 cups of Italian seasoned bread crumbs

4 Tablespoons of Olive oil


To make:
1. Wash your fresh eggplant and pat dry. Next, with a large, sharp knife cut the top off and slice a little piece off of the bottom. This helps to steady the eggplant to slice it. Now slice the eggplant into ¼ inch thin pieces.

2. Next, trim the purple skin from the outside edges of your eggplant slices.

3. Set up a bowl with beaten eggs and a plate with bread crumbs. Next, take your eggplant slices and cut in half so they are easier to work with. Take each one and dip into the beaten egg, them into the breadcrumbs.

4. Place the breaded eggplant slices into a large skillet with the olive oil inside warmed to Medium heat.

5. Cook each eggplant slice about 5 minutes on each side until brown and crispy. You may need to add olive oil half-way through, it seems to evaporate and burn faster than vegetable oil, which you may choose to substitute. I typically use whichever I have on hand.

6. Once eggplant slices are cooked through, remove them to a plate with a paper towel to absorb excess oil.

7. Now all that is left to do is layer in a baking dish! First place a few tablespoons of sauce on the bottom and lightly coat the bottom of dish. Next, add the eggplant slices in a single layer, sprinkle with parmesan cheese. Now add some sauce and cover with mozzarella cheese. Repeat again, ending with mozzarella cheese.

8. You can either bake immediately at 350 for about 20-30 minutes, until bubbly and the cheese is melted. Or you may freeze for up to 3months, and bake from frozen for 40 minutes or until bubbly and melted!

This is one of my favorite summer recipes, I love the fresh veggies and spices! You can make this with zucchini the exact same way and it is fabulous!!!! (With the zucchini I do not trim off the skin after slicing, and it takes 2-3 zucchini for an 8x8 dish.) Also, if I am trying to stretch this recipe to feed more people, I often cook some whole wheat penne pasta (or any kind I have on hand) and toss in more sauce to make this feed up to 8 people! Great with French Bread!!!
